You know, buffets are an awful lot of carbs. I really didn't think I ate that much and I drank unsweetened tea, but I gained a whole pound, even with walking six miles yesterday. It was probably the chunk of white coconut dessert that put me over the top.

That all sounds delicious!I'm debating. It could be a ceasar salad with scallops, homemade sauce with zucchini noodles and turkey sausage or sausage and lentil soup. I think that is the meals for the rest of the week. I just have to decide what is for today.
I have been buying the sea ones lately and I do a heavy sear on each side. I do like my scallops cooked just a tad more. I'm not a fan of them being raw in the middle. I usually use just a tiny bit of oil in the pan with pepper and garlic.That all sounds delicious!
I absolutely love scallops. Did you get the bay ones or the sea ones, and how do you cook them. I just do a quick sauté on both sides, with butter, s+p, and a squeeze of lemon...so sweet.
never had zucchini noodles. I do not have a spriralizer.
