Do you have access to Kerry Butter there? (Sold in supermarkets here). You it's butter from grass-fed, pastured cows. Some extra fat in his diet would help. You can give him a dab of unsalted Kerry butter on his food. Or pull off some of the fat from the thighs when you make the food for them and freeze it in little bits - that should thaw quickly, and you can just add some extra fat to his meals.
As you know, cats do great with fat, and it has almost twice the calories of protein. Obviously he needs the protein! But he's getting that.
At this international market a few towns over from me, they sell just pork fat in a quart-sized white container. I'm not sure if something like that would work (if you could find it)?He did not like the butter in his food, I tried a teaspoon and then a half teaspoon and he walked away from his plate each time. Maybe the skins would be better?
