Pan-seared chicken breasts with sun-dried tomatoes. It's supposed to a low-cal, low-fat dish that I found on Pinterest. I'm using dehydrated tomatoes that I did last summer....still have a couple containers left. Probably a bit of brown rice to go with and steamed broccoli.

That sounds so good.

I'm making breakfast for dinner tonight. Pancakes, peameal bacon, eggs, toast....depending on what everyone wants. I will probably just have a piece of the bacon, an egg and some salad.

Pecan-smoked chicken legs (left over from Sunday's cook-fest), mashed potatoes with garden fresh garlic chives, honey-glazed carrots, spring greens salad, freshly baked cat-head biscuits-- no actual cat heads involved, ha ha!

When I fire up the grill or smoker every Sunday, I get 3 little noses twitching! My cats love grilled meat. I even cook an extra piece without any seasoning just for them. They'll just about rip your arm off for a bit of grilled steak or some smoked chicken-- and there are NO words to describe what happens when I do a smoked turkey for Thanksgiving!

Empanadas, chicken thighs, rice and beans and yet to be decided vegetable.

It was pretty good and I'm going to make it again, but next time, I think I will add some frozen artichoke hearts. It just seems that artichokes would fit that dish.

Tonight will be a sweet & sour shrimp recipe (found it in one of my low-cal cookbooks). With brown rice.....again.

That all sounds delicious!  

I absolutely love scallops. Did you get the bay ones or the sea ones, and how do you cook them. I just do a quick sauté on both sides, with butter, s+p, and a squeeze of lemon...so sweet. 

never had zucchini noodles. I do not have a spriralizer. 

Send some leftovers my way!!!  :chescat:
I've never had a scallop.

I'm debating. It could be a ceasar salad with scallops, homemade sauce with zucchini noodles and turkey sausage or sausage and lentil soup. I think that is the meals for the rest of the week. I just have to decide what is for today.
Last night ended up being the soup. Tonight is going to be the ceasar salad with scallops.

a(nother) smoked honey ham and mustard sandwich, possibly with some soup (chicken noodle or tomato), a handful of corn chips, and 2-3 vanilla sandwich cookies.
