I think we're going to throw a couple of hot dogs on the grill tonight. I took some baked beans out of the freezer this morning to thaw in the fridge.

We're doing burgers tonight; Rick will do them on the grill. And whatever he wants to make as a side is fine with me.

Beef with a beer and Dijon mustard gravy over noodles. I'm also throwing some carrots into the mix. This is a recipe from Lorna Sass' cookbook Pressure Perfect for the pressure cooker, but I'm adding a bit of a rub to the beef before browning, just for a bit of an extra kick. I'm using a boneless chuck roast, so in the pressure cooker, it should be done in about an hour. Also a bit of fresh broccoli coleslaw to go with; I can throw that together while the beef is cooking.

I threw a small pork roast in the crockpot this morning. I'm thinking shredded pork sandwiches with a bit of potato salad. And a fresh apple crumb pie for dessert (I like crumb pies more than double-crust pies, so quite often I'll do crumb pies). I made some iced tea this morning while I was getting the dishes out of the dishwasher and giving the cats their breakfast.

Pot roast (actually what's left of the roast cooked for cat food :lol3:), mashed potatoes and a green bean and sweet pepper salad.

Grilled pizza tonight. Took the last dough ball out of the freezer last night and it's pretty well thawed this morning. I'll throw it into the microwave when I get home from work and let it come to room temp while we're getting groceries. Til we get back home, it should be ready to go. It will be a vegetarian pizza for our Meatless Monday.

Yum! Sounds delicious!

I made a big pot of vegetable soup on Sunday afternoon. I put most of it in containers for the freezer, but kept enough out for dinner tonight as I won't get home until later. Probably with some maple cornbread, if dear Richard feels up to making it. I left the recipe out for him.

Good question! Might be able to talk the BF into pizza again tonight ... we are packing up the kitchen and other rooms of the apartment tonight since we move a week from today and have procrastinated! So now more cooking dinner for at least a week!

This is a good question. I won't have any prep time for dinner as I am meeting Aaron at the mechanic aroudn dinner time to drop the truck off. I may just take something out of the freezer to heat up quick.

Peaches, how was the chuck roast with the balsamic vinegar? I love balsamic vinegar; it's really good stuff.

Spaghetti tonight. On Sunday when I was cleaning out the freezer, I found a quart of pasta sauce that I had made back in July. Since I've been doing tomatoes for a while now, I figured we might as well use this up. And Rick could happily eat spaghetti every night of the week and not complain. He can have the rest of the broccoli salad from our dinner on Sunday, too.

It wasn't as good as I hoped, Winchester. I followed the recipe exactly, but next time I'll try it with less balsamic vinegar in it. It was a little strong.

Rick had a dentist appt yesterday afternoon and til he got home, he was not doing well. He said it was the most pain he thinks he's ever had at the dentist. (I should mention that he never gets Novocaine....never. He grins and bears it.) As soon as he walked into the kitchen, I knew something was wrong; he was still white as a sheet and his nerves were really on edge. He couldn't eat anything. So I didn't bother heating anything for dinner. 

Later on last night, he said he thought he could eat a little something, so I heated up the leftover vegetable soup from Tuesday night for him. I really didn't bother eating last night.....other than a couple tablespoon-sized pieces of chocolate chip cookie dough 
 and a small chunk of sharp cheese.

Spaghetti tonight, since we didn't have it last night. That works out anyway, because Rick has to do union stewards training all day today, followed by his union meeting right after work. And then he bowls early. Dinner will have to be quick.
