A chicken noodle casserole with cheese, sour cream, and frozen peas. I put it together last night and par-baked it. Will finish baking it for dinner tonight.

Red state blues.
Pork chops and mashed potatoes with gravy, and fried okra.  I'm almost embarrassed to say it, but there is a gas station/convenience store down the road that sells crazy cheap home-cooked food in huge portions, and the chops are Monday's offering.  It's obviously not fancy, but it always smells fantastic in there, and the swarms of construction workers and other laborers who expect value for their money is a high recommendation.  Basic Southern food like Grandma would make, and a lovely break for the resident cook (me.)

Some really good meals out there, people! JazzyP, the best way to tell if a place serves good food is by looking in the parking lot. When you see a lot of trucks, the food is good and not overly expensive. My Dad used to tell me that all the time.

That chicken noodle casserole was good last night. I made it up as I went and I was a little surprised when Rick said how much he liked it. I wish now that I could remember exactly what I did because it was a keeper.

We are doing shrimp kabobs tonight over sugar peas and brown rice. I got the shrimp out of the freezer last night to thaw on ice in the fridge (we don't live close enough to any place that has freshly caught shrimp).

That reminds me of my sister. It was late Sunday night and we going to Virginia Beach to watch my nephew play in his hockey game. We were all starving and there were very few restaurants. Finally we came to a Chinese restaurant but there were only 2 cars in the parking lot. She did not want to stop there because like your dad she believes a restaurant is no good unless there are a lot of cars and trucks in the parking lot.  I finally got her to go in and eat. It wasn't that great but better than starving.

We were driving back from Chicago a few years ago and had gotten into PA on I-80. There was a restaurant, didn't look the best, but it was crowded with cars and trucks. I told Rick, "If the parking lot is crowded, the food is good! That's what Dad says!" So we went in. The food was delicious, the prices were excellent and we certainly had enough to eat. So now, every time, we come back from anywhere on I-80, we stop there. It's a good place.

Rick said last night that he was hungry for sloppy joes, so that's our dinner tonight. On 100-calorie buns. With sweet potato fries done in the air fryer.

Leftovers. I have roasted turnips with pork chops. I think I will take out a package of green lima beans from the freezer and that will be our green vegetable.

i'll heat up some pasta with spaghetti sauce and a couple meatballs (which i made last night -- they're baked in the oven......love that). a handful of mini pretzels, and a peanut butter brownie ought to round out my meal nicely.

I really need to make some of my own tomato sauce and a small bunch of meatballs.... yum...

Myself, I am having a salad... at least I made that for supper, but since I came back from the hairdresser's I am, freezing...Just had some hot chocolate..

I am thinking of changing that to an easy supper:  hot dogs and beans!!

i made the spaghetti sauce too -- using a recipe i found online, as a 'use it up' for some canned tomato juice i had in my pantry. both sauce and meatballs did taste really good!

i'll heat up more pasta and sauce, with a couple meatballs. probably have a handful of mini pretzels. and a peanut butter brownie for dessert.

Home made sauce is so much better than that stuff you buy in a jar. I used to grow my own tomatoes and I made the best pasta sauce from them.

Tonight I had broccoli, cottage cheese and a sour pickle.

You tickle me. You sure love those mini pretzels don't you? I can't eat pretzels. The salt on them make me sick to my stomach.

I love them too. Pretzels are my #1 favorite salty snack. I love soft pretzels too and have been known to make a meal out of some Superpretzels, cheddar cheese and wine. It's the Florida version of having a baguette, cheese and wine in Paris.

They do make unsalted ones.

Yes. Homemade sauce is way better. When I do make sauce, I make it in the crock pot. It comes out so good.

ETA- I don't know what we will be having tonight. Take out of some sort. I will see what DD wants. She makes the final decision because she's such a picky eater.

The kids will have some chicken breast with their supper tonight. Boneless, skinless chicken breast is on sale BOGO at Publix so I will stock up for them. They will be quite happy. I shred it while it's still warm and top their dishes with it

Whenever I need something crunchy and salty, I go for pretzels. I love them. I think Utz is our favorite (Utz also has a great Salt and Malt Vinegar Potato Chip).I am also a big soft pretzel fan.

I will often grab my stock pot and made a huge pot of pasta sauce. Then I'll store it in containers for the freezer. Homemade pasta sauce is the best. We do use the jar from time to time, but not often.

Meatloaf tonight, but made with ground turkey. Not sure about sides yet.

Tuna sammiches.  I have a hankering for them, and Hekitty will enjoy the "tuna soup."  I REALLY want a hot dog with onions and cheese, but have nothing but the onions on hand.  SIGH...The Junk Food Bug has bitten me today!
