My great-grandmother was a wiz at making divinity. Every few years or so I get the bug to try my hand at it. Tomorrow is the big day!
Divinity is a white fudge-like candy made mainly of sugar, egg whites and white corn syrup. For some reason my batches almost never turn out. If you don't get the egg whites fluffed up enough the batch is runny. If there's too much humidity the batch is runny.

Well it isn't chocolate or sweet, but it is a favorite Christmas tradition of mine (and now dh's too). I make my grandmother's version of a Sfincione - a thick, square dough with seasoned bread crumbs, clumps of tomatoes atop bits of anchovies and a special cheese. Just wonderful, and better the next day when it's cold
I think it's better <G>. I never understood my gram calling it Christmas pizza until I did some research on common recipes for that part of Italy and up popped an artilce (with a photo) of this and the description was that the common man would make this only at Christmas time etc. and I found they never call it pizza - I think my Gram did because it was easier than explaining it and she didn't use the italian name for the dish.Originally Posted by laureen227
