Tonight I think its going to be Tuna helper or something simple. Lee asked what was for dinner tonight when we were eating last night! LOL! I had no clue then and I am not really sure I have a good clue now!

I don't mind doing the cooking. He made some peanut butter and chocolate brownies on sunday and I keep finding chocolate everywhere! First it was on the floor, then it was on the counter, then it was in the microwave, who knows where I will find it next!

Well, I got started too late last night and never made the salmon cakes, etc. We had quesidillas with Montery Jack cheese, Pabalono peppers, onion & vegetarian sausage served with corn on the cob.

They were ok, but I was in the mood for the dinner I was planning all day, especially the squash casserole. AND I undercooked the corn.

I love corn on the cob too. You can get good corn on the cob this time of year? We have to wait until August. Tonight I'm having stir fried chicken with braised tofu and peapods.
I have to go pick up some rice though.

The corn would have been good if I had cooked it right. I got it at a roadside stand, but I don't know where it came from.
Mmmmmmmmm peapods and tofu. What do you like to season your tofu with?

-the sauce that it gets the final boil in. It's got hot chili bean paste in it. I love it!

Tonight is what we refer to as FFY (fend for yourself) so, it just depends on what I'm in the mood for and what I have at my disposal.
