My daughter is going to manage a ski chalet for the winter season, and is practising her culinary skills. She has to provide breakfast, afternoon tea and a three-course dinner for ten each night, and she is most concerned about the cakes for tea. She is experimenting with as many recipes as she can find that basically involve throwing all the ingredients into a food processor and then into the oven. As she is living with me till then, guess who has to sample and comment on all her efforts?
So far we have had crunchy apple and cinnamon cake, chocolate fudge cake, walnut brownies, lemon drizzle cake, banana bread, fruit and spice cake, meringues, raspberry muffins and gingerbread. Most of them she has made two or three times till she feels she has the seasoning and timing just right. So I have a kitchen full of cake and I think I have put on pounds in just a week.
If anyone has a favourite easy cake recipe to share, please feel free to send it. And I wish I could send some cake to everyone!
