Is there a vegetable that you refuse to eat?

For me, it's eggplant. I have tried and I can't. Rick's mom made ratatouille one time and invited us for dinner. I actually gagged on it; thank goodness we were in the kitchen and not at the table. I don't know that I would have been able to keep it down while sitting at the table. Nasty stuff it is.

Okra is another one, although I haven't tried it. It's the slime that bothers me, I think. I've seen okra and it's just....well, icky. Somebody told me that okra is great breaded and fried. I don't do breaded and I don't do fried. So there! 
  

I love pretty much everything else. Dark green leafy vegetables, dark orange vegetables and everything in between. As I've mentioned before, I just love squashes, all of the squashes. Butternut just rocks and so does acorn. I can eat my fill of broccoli, Brussels sprouts, corn, peas, you name it, I'll eat it. My GYN keeps telling me to eat my dark green leafies and my dark orange veggies and I'll live to be 100. Eating them is not a problem for me.

Just leave the eggplant and the okra out of my kitchen and we'll be fine.

I know people are going to think I am crazy but I really dislike asparagus.  I didn't even realize it was an expensive delicacy until I left home because my dad raised it in the garden and we had it lunch and dinner while it was in season.

There are vegetables that I like better than others but asparagus is the one that I won't eat.

I'm with you on the eggplant and okra.  (I've had it breaded and fried, by the way--still not good.)

I'm with you on the eggplant and okra.  (I've had it breaded and fried, by the way--still not good.)   I love all kinds of squash.  Yellow/orange and dark green veggies are my favorite.

  Never met a vegetable I didn't like, except pickled beets but that doesn't count because I love fresh beets (and the greens). Okra is my all-time favorite vegetable! I love steaming the pods with a sprinkle of sea salt, they go bright green and are firm and there's no slime whatsoever. Delicious! 

Okra is one of those vegetables that you have to know how to pick - if the ribs are even a little bit tough it's not good to eat. It also benefits from a quick cooking; letting it cook (or disintegrate) for a long time in the dish is not the best way to go IMO, although I will eat and enjoy gumbo any time I can.

I love all vegetables. I could give up meat and never miss it. But vegetables, bring them on, every single one of them. My favorite yellow one is sweet potato. I even eat them cold for breakfast. :lol3:

Never heard of steaming it with sea salt! I've only ever had it boiled up in some icky soup or breaded and fried for too long--which made it slimy AND greasy.

I'll eat all of them, even ones I don't favor given the right preparation.

For instance, peas.  Not a fan in general, however, love them raw, and love them lightly steamed with butter and mint.  Also, pea soup is a yum.

peas and mushrroms for me I wat way may vegetables now than i ever did, but still can"t stomach peas and mushrooms.

I'm pretty picky when it comes to veggies. I hate asparagus. My brother even seasoned it in olive oil and cooked it and I just.. can't like it. I like peas when they are in the pod. But nope on out.

I'm not a big onion fan like in salads and stuff but will eat one on a cheeseburger or sandwich. I really don't like green beans but I like green bean casserole. I also don't like avocados but love guacamole. I'm a bit weird lol.


My favorite veggies are carrots, celery especially with cream cheese or peanut butter, corn on the cob and off the cob, banana peppers for sandwiches, sprouts not brussel sprouts but they are the stringy things you put on sub sandwiches, water chestnuts exclusively in stuffing or chinese food, cucumbers and I adore pickles. I love black and green olives too.

For me it's the preparation not the veggies. Just about any veggie is great when roasted with a bit of garlic :D. Or steamed with lemon. Just about any veggie is gross when boiled, bleh. I've been eating a lot of roasted veggies lately, so delicious and so easy!

Eggplant seems to pick up the flavor of whatever it's cooked with so it's OK in something like eggplant parmesan. But its natural taste is bitter, not my favorite. I like pickled okra if it's not slimy (it shouldn't be but is if it gets old). I don't like raw kale but kale chips are delish.
