I have a 10 year old cat who has been on science diet since born. Can I just switch her to aims without mixing the food since she is already on a healthy food product?

It can upset their stomach.  I would do a little more each day.  1/4, 1/2, 3/4.

Although there are many people who don't think either Science Diet or Iams either one are really good foods
.  I"m guessing you're talking dry food vs canned?  Just curious, why after all these years you are switching?  And since you ARE making a change, why not add some canned food to the mix, assuming you really ARE talking about dry food vs canned.

Here are some articles you might want to read on cat nutrition  (or not...up to you):

I believe it is always said to slowly introduce new foods. I know from my strays that some cats adjust to anything, but if you can slowly add it, that's prob best

If you switch between canned foods it's not really a problem. Switching between dry foods requires a slow switchover like gwlaw99 suggested.

If you are currently feeding dry I second the recommendation to move to wet. Dry is suspected to contribute to many health issues such as UTIs/kidney disease, constipation, IBD to name only a few.

Whatever you do, I would also recommend moving away from Science Diet. The Hill's line is noted for high carb content and non-animal protein sources. For the money you can do much better.

With some cats, you have to go slow switching between canned foods, too.  Some of my cats could eat anything I give them, but others need a very gradual change, or they'll get upset stomachs and vomit up after eating.

Not sure what you are looking at when you say "it" says 49 protein, but according to the Felinecrf.org website, the protein is around 43 on a dry matter basis, and the phosphorus is 1.28 calculated the same way.  If you're looking at the can, that's Guaranteed Analysis, which is different.

The theory that kidney cats should not be fed high protein foods is being seriously looked at these days by the Vet community.  Cats need good quality protein in their diet.  But one thing is for certain with kidney cats, because their appetites come and go, the very best food for them is something they will eat
.  I've had three kidney cats and our Vet always told us to try to get them to eat as low phosphorus as possible, but not to stress about it, because just getting them to eat is the most important of all.

Have you seen this food chart?  It's in order of the amount of phosphorus in foods.  Maybe it will help you out when looking for foods when Paige boycotts that Turducken
Not ALL foods are listed, but many are:  http://www.felinecrf.org/canned_food_usa.htm#canned_usa
