Two blueberry muffins last night after supper (they're not real large)

One of my unconventional breakfasts - stalk of celery and some thai seasoned boneless, skinless chicken thighs I had baked up last night.  1 oz. half and half in my decaf coffee.

A blueberry muffin with my coffee this morning

(I made gluten-free blueberry muffins the other night. They're pretty good. But I must have done something wrong somewhere; the recipes says it makes 12 muffins and I got 18. So we kept six, I gave six to my BIL and sister, and brought six into work. They were gone in no time and I got "thumbs-up" from everybody.)

Did you use rice flour?  A lady I used to work with brought in brownies that she made with rice flour.  They were different but they were pretty good.

A leftover sausage from dinner yesterday, pineapple and a rice crispy square. That was lunch 2 hours ago and I am hungry again. Gotta love pregnancy, one day I can hardly eat and the next I am stuffing my face.

I've never had red velvet cake and. I'm not going to make it or should I. What I'm looking for is an easy cake big enough to fill a 7" cake tin.
do you have a bundt cake pan? a bundt cake should fill a 7" cake tin. are you talking about a 7" in diameter cake tin, or 7" in height? bundt cakes are usually 10 inches in diameter. a very good, very easy cake that i make often is Mildred's Sour Cream Pound Cake, a recipe i found at allrecipes dot com.

homemade pepperoni french bread pizza and a slice of zucchini nut bread. that was a few hours ago, so i'm just getting ready for a little snack. i'll have some celery pieces and a yogurt cup with some granola sprinkled over it.

oh, so you've got a 7" square baking pan. yes, a bundt cake is circular with the thing in the middle (that leaves a "donut hole" in the middle of the cake). do you mean lightly browned or light in texture? i use vegetable shortening to grease my bundt pan and grease it generously. occasionally, i'll have trouble getting the bundt cake to let loose of the pan. what i use is a plastic knife to go around the edges of the cake to loosen it.

if you have a recipe you like for a cake already but it's too much batter for your 7" pan, you could use the 7" pan and as many spots in a muffin tin as needed to use up the rest of the batter.

i do have a wonderful recipe i found for blondies though. i got it at smitten kitchen dot com -- great website! i make a version of the blondies with mashed bananas and walnuts in it -- banana walnut blondies. i dream about those blondies sometimes, they're so good.
