Margaritas!! Sorry, couldn't resist! Going out for Mexican tonight with a bunch of friends and co-workers. It

should be a fun time. 

The thing about this restaurant is that when we first started going out to dinner like this, it was with the understanding that we would try new restaurants out, that we wouldn't go to the same place every time. But.....well, we like it there. The waitress is a hoot and she always greets us with a big smile. They have the best margaritas around (works for me!) and the food is great. We tend to be a bit of a noisy group and they put up with us. So every time somebody suggests going out to dinner, we always end up there.

Last night, while I was making our tacos, I also made a batch of barbecue and a small bowl of pasta salad. That way, dear Richard will have something for dinner when he gets home. He won't have to do much in the way of cooking.

I forgot to get something out of the freezer last night, so I'm thinking pasta with a bit of spinach, tomatoes, and cannellini beans. It's something that I can throw together fairly quickly. And since we didn't do meatless on Monday, we can do it tonight.

We bought a lot of cheese when we in Vermont and since we are having a larger lunch, I think it will be cheese and crackers.

Cheese.....yum!

Well, we're having a family picnic at a local state park. Years and years ago, when my parents were in good health, they camped all the time. And for years, they were a host family at the state park. They cleaned the bathrooms, answered questions from other campers, and helped people with problems. In return, they were able to camp for six weeks at a time free of charge. They loved it because they got to meet new people and they got to camp; they always loved camping. And when we were kids, we spent a lot of time in that state park with Mom and Dad.

So we decided that this year, in honor of Mom and Dad, we wanted to have our Labor Day picnic at the park. My sister and BIL and their kids are going up this morning to get a table. Rick and I and our kids are leaving after Rick gets home from church. We're taking Rick's Mom with us, too, so she can get out and enjoy the day. I think there will be 15 of us, as my brother and SIL can't make it. Should be fun.

Hamburgers and brats, bbq chicken, macaroni salad, baked beans, fruit salad, and whatever the kids decide to bring. Dessert is just bar cookies and a lemonade cake.

We're having one of DH's friends over for a wargaming (Chaos) session tomorrow (I'll retreat to upstairs, and sew!). We're doing lunch--which usually extends into dinner! I started cooking today; we're having some of it for tonight's dinner:

Homemade meatball & tomato sauce/cheddar sandwiches. I bought a 6lb pack of hamburger at Wegmans today, and have made all of it into meatballs. We'll eat some tonight and tomorrow, then I'll freeze the rest.

Pasta salad

Twice-baked Cardiac Arrest Spuds: DH's specialty: scooped out baked russets, mashed with cooked, diced bacon, butter, and cheddar, then put back into the skins, then baked. They get topped with sour cream and diced green onions.  They also freeze well!

I've also used up my soft garden tomatoes; I diced them, added diced red and green peppers and onions, and some brown sugar, and threw it all into the slow-cooker. Great stewed tomatoes for freezing! (I add them to meals during the winter, such as soups and casseroles.)

I've started a new thread for this since the other was getting quite long.

I haven't gone grocery shopping yet since coming back from vacation, so must do that so I can get back into preparing dinner!

I think tonight it going to be pizza with a nice green salad.

We're thinking about pizza, too. But from the store as some of them are on sale this week. Since yesterday was a holiday, tonight will be grocery shopping night.

I'm debating. It's either going to be pizza gain with arugula salad or it will be baked eggplant with homemade spaghetti sauce. The tomatoes are in the oven, but must have a larger than normal water content because they aren't done yet and should have been an hour ago! Leaning towards the pizza because of that and the eggplant tomorrow.

We had Chicken Curly Noodle Soup. Rick had a dentist appointment this afternoon for a root canal, so dinner had to be soup tonight to make it a little easier for him to eat.

Pasta with tomatoes and grilled zucchini....no meat tonight.

Rick starts bowling tonight, so dinner had to be quick. 

And he's down today with a bad sinus infection. He called off work bc he's hurting so badly he can't stand up (chills, dizziness, and lots of sinus pain and pressure). I don't know if he'll be able to bowl tonight or not.

We have a few slices of bacon in the fridge, so Rick suggested BLTs tonight. Yum!
