I am having spaghetti tonight with a Mushroom and Romano Cheese Sauce. And of course my favorite, a mango for dessert.

Why no ice cream with a sore throat?
It is not just ice cream any type of diary the lactose in it is suppose to cause the formation of mucus if you have a respiratory infection of any kind. I didn't know that until about a year ago when I heard it on a health show.

Don't mind me, I'm just hanging out in here checking out dinner ideas. It's 3:30 and I don't have a clue what to fix
I'll probably end up just having some steamed broccoli and cauliflower with a baked potato.

Chicken Angelo...chicken browned with garlic, mushrooms, artichoke hearts, in a white wine sauce and red wine noodles...

Salmon sausages, potato patties, probably a simple lettuce and tomato salad.

ETA: Well the potato patties and the salad stay the same, but there aren't enough salmon sausages for three, and a friend just called needing to come by and talk, so the sausages will be a package from the freezer of pork sausages. It'll be fine. He should be here soon.

Friday night, just the two of us, I'm putting a fresh wild salmon fillet on the BBQ, along with some asparagus. I also have some little nugget potatoes which will be served liberally buttered and herbed with something fresh from the pots on the back porch (I'll figure out which later
). Mango for dessert, since there were nice ones in the market. Actually, it's just about time to go and do this thing...

Tonight is going to be BBQ night. I phoned my sister earlier and she and my aunt are going to join me.
I just took a nice sirloin steak and some pork spare ribs out of the freezer. With that I am going to do foil wrapped potato's and corn on the cob. My sister said she would bring a green salad, and my aunt is making ambrosia for dessert..


And yes I plan on eating to much because this is my first BBQ of the season.

I am thinking of going with soup, homemade of course. I make this killer stuff, I call it swamp soup because it ends up looking like, well, swamp dedge. I boil down a chicken with the usual stock ingredients, a bit of carrot, onion, celery and let that sloooooow simer till the meat falls off the bone. After taking the chicken out and picking off the meat I put the bones back in and simmer some more till it is reduced a bit, strain the broth, then add the chicken meat, spinach, canned chopped tomatoes, fresh mushrooms (I sautee them first) more onions (also sauteed) and about a truck load of garlic and oregano. Right before serving I stir in a good dollop of cottage cheese, large curd (If you add that while it is cooking it melts and sticks to the pan) Some good crunchy buttered bread on the side to dunk, YUM!
Its similar but not quite to Italian wedding soup, (before adding the cheese) just no meatballs.

Since I'm getting at least a couple people to help me move stuff into storage, I've offered up pizza as a thank you... so I'll be stopping at Trader Joe's for some pizza options... at least one person who might show is vegetarian... so there are better choices than take out.

I saw a cooking show on the Food Channel Thursday so I made hubby go out this morning and get the ingredients. We are having chicken empanadas with tomato pineapple salsa to dip them in and some tortilla soup! I hope the empanadas turn out well!

Pizza sounds really good, though!
