Kids worked hard today as did dh so it is Del Taco for D and I and McD's or Del Taco (right next to each other). I need to pick my meds up (got to get them on the day bc of what I get) and it is all in the same area.

Arugula (from the garden :) ) salad with basil, sun-dried tomato, roasted red peppers, low fat cheese and pine nuts with some aged balsamic. Mine will be topped with chicken, my husband's with smoked salmon.

Pizza and wings. Unfortunately, the pizza place I really want it from is closed on Mondays so it will be from a different place.

I had dome cooked rice in the fridge so I took that and some frozen chicken balls. Fried onion and garlic then added the rice and fried it a bit. Added s tin of crushed tomatoes and some water. Quartered the chicken balls and added them and a tin of corn brought it all to the boil then seasoned it. Turned off the gas and let it sit for a few hours. Came out jolly. Nice.

Meatball recipe

1 lb ground beef 80/20
1/2 cup italian bread crumbs
1/2 cup fresh grated Parmesan reggiano cheese
2 eggs beaten
1 teaspoon minced garlic
2 tablespoon parsley
1/2 teaspoon salt
Fresh ground black pepper to taste

Mix above together. Don't over mix or balls get tough.
Form into balls slightly larger than golf balls. Bake on lightly greased cookie sheet at 325 turning once until cooked through.
You can either freeze for later or add balls to your favorite sauce.
If adding to sauce simmer on low for 15-20 minutes.

I don't know yet. We have to grab a few groceries tonight and I need to sit down and figure out some menus for this week.

Thank you BBDOLL22!  Saved it to my computer.

I don't know what to tell you to do with that whole chicken, except to tell people to save the bones and any pieces of meat for broth-making later.  I freeze the bones until I need them.  Hmmm...chicken soup is sounding like a good idea right now...may break out a bag of bones!
