I love squash, zucchini, etc and almost live on it during the summer but I've never cooked a winter squash before. They had a special at the market yesterday so I picked one up. It was a Delicata squash (white with green stripes).

They had them, acorn, butternut...all the pretty ones, along with tini-tiny pumpkins. I think they were selling them more for decoration than for eating. But after I got home I checked online and found a very simple recipe. Tried it and OMG!!!! It was delicious!! I HAVE to make it for Thanksgiving.
All you do is slice it and quarter the slices. Cut the skin off and take out the seeds (it's almost like a pumpkin inside). Put in a covered baking dish with about 1" of water and bake until soft (about 1 1/2 hours). Take it out, drain most of the water off, sprinkle with brown sugar and add a little butter and bake for about 15 more minutes. OMG...it was almost like dessert. In fact, I wanted to put ice cream on top of it. It was so good!!
Now, I want to try butternut squash soup.
Anyone else have any personal recipes for winter squash?
