Dinner last night. Split pea soup. With slices of Italian bread. I sliced the bread thickly, then combined some butter and mustard and slathered that on each slice. Then I sprinkled some low-fat shredded jalepeno cheese over the top. Broiled for about 3 minutes, just long enough to give a bit of toast to the slices and melt the cheese. Yum
Last night, after another night at the ER we went home and ate a sandwich before relaxing before bed. I am now eating a couple boiled eggs for breakfast, as usual.
I do think I'm going to have Chinese for lunch. I've been looking forward to some hot & sour soup and an eggroll.
