Pierogies are the polish version of a ravioli or a chinese dumpling. Usually filled with one of more of these: potato, cheese, sauerkraut, onion or other stuff. Take a round circle of dough, fill with stuffing, fold over and boil. Best sauteed in butter after boiled.Originally Posted by StarryEyedTiGeR

Italian Sausage and Peppers
(modified from cooks.com)
2 lb Italian Link Sausage
1 very large green pepper, sliced in strips
1 very large onion, sliced (I use sweet onions)
1 lb. mushrooms, sliced (optional)
1-1/2 tsp oregano
1/2 tsp basil
1/2 tsp garlic powder
1 cup white wine
1 tbsp oil
salt & pepper to taste
Separate links of sausage and prick with a fork. Place in Dutch oven with 1/2 inch of water. Bring to a boil. Reduce heat and simmer (uncovered) until all water has evaporated and sausages have given up some of their fat and are lightly browned all over (about 1 hour). Drain fat from pan. Cut sausages into smaller pieces about 1-1/2 inches long. Add wine, garlic powder, basil, oregano, oil, salt and pepper. Cover and simmer about 30 minutes. Top with green peppers, onions and mushrooms. Mix well. Cover and simmer another 30 minutes or until sausage is done, stirring occasionally.
