We ended up having homemade hamburgers on the bbq. My mom and sister came for dinner so I made something we could all eat. We will have taco salad on Monday.

OMG. Yummy.For dinner last night, I had leftovers that my culinary students produced for class on Friday. My advanced students produced a southwestern inspired version of Cordon Bleu. Cordon Bleu (which was popular during the 70's) featured a chicken breast stuffed with Swiss Cheese and ham that was breaded and pan fried until it was a crisp golden brown on the outside and the cheese was melted on the inside. My version featured a chicken breast stuffed with crispy bacon, Pepper Jack cheese, and green chilies. After breading the chicken, the students pan fried it in olive oil and then finished it in the oven. The chicken was plated with a Cajun dish of red beans and rice.
For dessert I had a trio of berry glazed tarts. I had made two dozen and had set aside 1 1/2 dozen for the volunteers at an animal shelter.
