Is there a way to see what I've given other people? And do the gifts show up immediately or do they have to be "accepted" first? Sorry if this is a dumb question, I don't do this often enough to make it stick in my brain.

if you click onto the vbplaza tab like you're giving a gift there is an option called "History" click on that and it tells you who you've given gifts to, who's given gifts to you, as well as donations. and no, the gifts show up immediately, they do not have to be accepted
