Hi,
sounds to me as if you were talking about my own cat.
It took me a long time and lot of money to get the right vet and diagnose.
All blood test were normal for kidneys, liver etc.
So I went to a specialist and he made an ammoniak-tolerance-test.
So he found out that my cat has a portosystemic shunt (PSS).
Maybe you should test her for PSS too.
Here the list of some symtoms my cat developed (2010-2017) little by little:
1. Eating everything (Allotriophagie/Pica-Syndrom)
2. Eating a lot (Polyphagie) and weight gain (most cats with PSS eat less and are thin)
3. Aggressiveness to my other cat (they always liked eachother bevore)
4. stomac cramps after eating (looked like a hiccup)
and then years later..
5. sleeping a lot
6. when she lays down to sleep:
strange convulsions/ fasciculations in the muscles of her shoulders and
years later also in her arms
and years later..
7. ascites
8. flatulence
9. salivating/ drooling
and later also..
10. drinking a lot (Polydypsie) and Polyurie
11. vomiting
12. stopped eating (forced feeding rescued her) started eating again
13. glassy eyes
14. smacking
15. switching from apathy to agitatedness
16. seizures (tought she was a heavy dreamer/didn´t look like seizures on youtube
now I know that she has hepatoenzephalopathie due to the intoxication of ammoniak)
17. constipation (most cats with PSS have diarrhea)

Not all the cats with PSS have the same symptoms or all of those listed above some even show
headpressing
But it could also be IBD.
Hope you´ll find a specialist who finds the right diagnose.
