We're on an off-year this year for Christmas, meaning that our kids will come up to see us the Saturday after Christmas. And that's fine with us; we get to have two Christmases this year. And I guess I'll be making two Christmas dinners. I didn't know until the weekend that we're on an off-year.)
We're still going to have our regular Christmas dinner on Christmas Day, but I have made some minor changes:
Crown Roast of Pork with Cornbread and Apple Stuffing
Potato Casserole with Bacon and Caramelized Onions (no mashed potatoes this year, but this is an excellent potato dish)
Dried Corn (no corn pudding this year; Rick loves dried corn and he hasn't had it for a while. And I just made corn pudding at Thanksgiving, so I'm good)
Roasted Winter Vegetables - butternut squash, sweet potatoes, carrots, and parsnips
Asparagus with Leeks
Creamed Onions
Cranberry Relish (leftover from Thanksgiving and is in the freezer)
Cinnamon Pickles and Lime Pickles
Old Farmhouse Chutney (to serve with the pork)
Apple Pie from the freezer
White Coconut Cake
Assorted Christmas Cookies with Almond Brittle and Dark Chocolate Buttercrunch candies
Some kind of a blush-type wine (not sure yet what brother and SIL are bringing)
(Any leftover pork will be used for pork and sauerkraut in the crock pot on New Year's Day; the sauerkraut is from our local Lions Club and is already stashed in the freezer.)
Since DS is requesting lasagna for dinner on Saturday, that's what I'm making:
Lasagna (thought I'd make three pans so they can take a pan home with them; we'll probably go through two pans at dinner)
Sesame Onion Braids (this is a braided bread with each piece wrapped around an onion filling before the whole thing is braided together)
Mandarin Orange and Pecan Salad
The pickles again
DS has requested a Peanut Butter Pie and a Caramel Apple Pie for dessert (He also asked that I save a piece of the coconut cake for him....that's going to be difficult, but I told him I'd try)
And I'll have cookies for everybody again
Rick's parents will be coming for both dinners and I'm pretty sure my brother and SIL will be coming for both dinners, too. My sister is going down to my niece's that weekend. I always let it up to DS to decide what he wants for dinner when they come up for the weekend instead of Christmas Day. And since everything but the salad will be made on Friday night, there's virtually no cooking for me on Saturday! It's simply throwing stuff in the oven, so it's easy for me!
