We just adopted two kittens from a friend who thinks they are around 8 weeks one male and one female. They happily ate dry kitten food and are playful and happy but we’re wondering what type of cat they look like. They still have beautiful blue eyes - is this still likely to change?

They begin to change around 4 to 7 weeks and will be their correct colour by 3 to 4 months.
If there's no sign of any change yet (little pigment changes etc) then you just may have blue-eyed cats. But give it time. :)

As for their breed... You probably know that most cats are Domestic and then have a coat description. I'll leave that to others to describe.

They're young to be away from their Mum... Good they have each other.
They're rather gorgeous!

As they are apparently points, their blue wont change. MAY change the nuance of blue as they grown up, but not the blueness as such.

The heavy money bet they are domestic. possibly longhair. What exact look alike they are, we will see better when they are older, but yeah, ragdoll look alike is a good guess so far.
