I would love to take photography classes or an advanced art class.
One thing I miss and wish I could do again is pottery! There's something relaxing about the feel of wet clay on your hands and creating something that is unique and one-of-a-kind.
Something else I always wished I had done (but never did) was woodworking! 

When my daughter was at school the boys did woodwork and the girls did womanly thinga. Joanna did woodwork.

Photography.  At first, I thought, well, you don't even have a car.  What would you photograph?  Then one of our members inspired me...there's always Hekitty, and then I took a hard look out the window...there's about a million colors and shapes and textures that I could capture, even WITH the walker!  I may have a look at online free courses from different colleges.  It would only be for audit, but I'd learn something!
