Probably Finnish, Norwegian, Swedish, Icelandic and Estonian food. Very much surrounded by a ton of Italian, Chinese, Mexican, Japanese, UK, Indian, the odd German/Czech etc etc restaurants (which don't get me wrong, is totally awesome!) So I think it would be totally unique to have Scandinavian/Finno-Ugric/Nordic food and drinks. And a reflection of a heritage that is near and dear to my heart.

Don't be perturbed either, Nordic food is much more interesting and tasty than people think!

I'd be there! I love trying things from different cultures. Just not like bugs or organ meats and things of that nature.

I wouldn't have a restaurant, I'd rather have a cafe. I'd serve typical cafe comfort food.

I'd only serve foods that I like!
It might sound stupid, but I'm a very picky eater. Being diagnosed with ASD earlier this year, this suddenly made a lot of sense. So I'd want to have a menu with a lot of so-called 'safe foods'. It would make going out to eat a lot less stressful, knowing there's more than just the kids menu I can pick from
