You can use this site http://www.nal.usda.gov/fnic/foodcomp/search/ . Though on this site it comes out to about 60%. Probably because they don't include the dm of bone in the calculation.Originally Posted by mschauer

I got 58% from a chicken Neck/turkey neck analysis done by Land O' Lakes food analysis lab. This analysis included the bone.
