I decided I wanted ham and scalloped potatoes for dinner tonight. But I didn't get around to making the scallops until nearly 6:30 pm, so I will have them as left overs tomorrow.
Scalloped potatoes are so easy to make, and you can change them up by using a different kind of creamed soup for the sauce.
The basic recipe for scalloped potatoes is:
Using a deep casserole dish:
Layer of sliced potatoes
Layer of sliced onions
Sprinkle 1 heaping TBSP flour
Dollop of butter/margarine
Salt and pepper
Continue to layer.
Mix up a can of creamed soup with equal parts milk. Mix well. Pour over the top of the potatoes and onions. Cover with a lid and bake on a cookie sheet (it will boil over) for about 90 minutes or until a knife inserted in the middle goes in easily.
I used my food processor to slice the onions and potatoes. 1 onion, 1 potato, 1 onion, 1 potato etc. Then I just poured what I needed into the dish for each layer. It doesn't have to be exact. Some layers can have more onions or more potatoes.
Try using cheddar cheese soup, broccoli soup, mushroom soup, celery soup.
My kitchen smells absolutely divine!!!
