We used to scrape that stuff down with an old steak knife on the occasions when they presented us with cannon and hock cuts. And there was some stuff, some sort of powder we used to put on them, but I think that was an antibiotic or antiseptic powder. All I know is we were pretty successful in getting them healed up cleanly and neatly. Although the afore-mentioned abcess (it had a good bit of proud, too) took a good three months as I recall.
