I asked this when I first started and to be honest I never got round to making it, now I have lost the recipes and I really want to make a simple one with options to add things and also suggestions on what to add to make it taste better. Thanks.x
Good place to start. For that 9x 13 pan you want two cups of macaroni and about 3 cups of sauce. Cheese can be whatever you fancy -- half a pound for that amount of sauce -- the stronger flavoured the better, and add about a teaspoon of mustard and a good sprinkle of cayenne. Easy peasy. Start with white sauce - equal amount of flour and butter melted together and cooked a few minutes (don't let it brown) add milk and allow to thicken. If too thick add more milk, the add grated cheeses (i used to use old cheddar, swiss and pizzza mozzarella mixed together) until the taste is to your liking. Combine with cooked elbow macaroni and either keep warm or pour into a 9X13" baking pan, top with grated parmesan and bake until the top is browned. Nope, no measurements, I just made in amounts according to what I wanted to have on hand.........
