Yes, please!

All this talk of chicken made me hungry for it. The ones I get that are really good (veggie fed, free range, 3 lb.) only come in on Fridays so we are having chicken Friday night!

The beef won out, and Carol_Petunia's yeast rolls. It's chilly and damp here so I couldn't grill, and wanted something warm, so I made beef stew. And yeast rolls, the best I've ever made... yeast breads are really difficult for me.

I make a mean enchilada; I use chile peppers imported from New Mexico for the sauce. I wish I could buy the Amy's family pack frozen cheese enchiladas in Canada! Those are SO good.

I make my own flour tortillas, also out of necessity. The best store bought ones here are a brand named, "Olafson's" no kidding!

Ok, kind of long but thought the more accurate the better. So easy after the first time!
Spanish Rice and Beans
Beans
Saute in pot 2-3 tablespoons veg oil, med-high heat
sliced red onion (half of med-small sized)
1-2 garlic cloves chopped
couple green pepper slices
chopped cilantro 1/5 cup
Saute 2 minutes then add choice of beans. 2 cans, I always use Goya, favorite is pink beans, also black, red, 1 pink 1 red kidney, pinto....all great for this recipe!
Optional but adds a lot.....1 packet Goya sazon
1 packet chicken bouillon
Add 1/2-1 cup water, cover and simmer stirring occasionally, 30-35 min.
Rice
Saute in pot 2 tablespoons veg oil 3-4 min, med/high heat
fine chopped red onion
chopped garlic
chopped cilantro
Optional 1 sazon and 1 chicken boiullon (yellow rice)
Add 1 1/2 cups rice and saute dry 3-4 minutes stirring
a few green olives
2 3/4 to 3 cups water, cover and simmer med 15-20 min
Spanish Stewed Chicken
Saute in pan 3-4 tablespoons veg oil,med/high heat
1 med/lrg red onion sliced and 1 teaspoon sugar for 3-4 min
then add 2-3 chopped garlic cloves
few green pepper slices
chopped cilantro
2 more minutes
Add chicken breast, thighs, drums, wings (skinless) Adobo and sear both sides
Optional 1 Sazon, 1 chicken bouillon, Worcestershire sauce (big part of flavor)
1 cup water, simmer on med flip occasionally 30-35 min!
You have a great sauce for rice, potatoes as well!
Really hope you try and enjoy! I have turned so many people on to it. Dated a Dominican back in the day and his mom taught me, she didn't even speak English!
