Since no one has guessed it yet, my quote "High Strung. High Strung? You, YOU, are High Strung!" is from Home Fries, spoken by Luke Wilson's character. If you are not familar with it may I suggest you rent it. It is a really touching romantic comedy with Drew Barrymore, Luke Wilson, Jake Busey, Sherry Duval, to name a few. Very funny and a sweet love story. . . . .

Aw, I missed the Jaws one! Roy Scheider as Brody said it. A little bit of Jaws history is that, for years, when someone was confronted with a huge problem, the term to use was "Were going to need a bigger boat".
