If you are religious you can tell them the Easter stories and say that is why we celebrate the greatest Christian festival or Jewish Passover. If not, you can just say that since time immemorial people have given each other eggs at Easter to celebrate the rebirth of the year and the coming of Spring. Either way, you get to have a holiday weekend and they should be satisfied.
