I just have to share this delicious recipe. I made it this past weekend and my god was it so good. Even my picky daughter ate it. I don't know about everyone else but I LOVE the crock pot. Throw it all in and let it do its thing. Here is the recipe:
Turn crock pot on high. Heat oil in a skillet. Add the oinon and saute until soft. Add the corn, black and olives. Stir for 1-2 mins. Add the garlic and stir for about 1 minute. Add the beef, brown and drain most of the fat.. Add salt and pepper, and the rest of the seasoning mix well. Add tomatoe paste and 1 cup of enchilada sauce. Mix well. Tear 2 tortillas in half and cover the bottom of the crock pot, taste some enchilada sauce and coat the tortillas. Add a layer of beef, topped with cheese. Repeat the layers. You want to end with tortillas on top. Cover the top layer of tortillas with sauce and cheese. Cover and cook for 2 hours. Serve immediately.
I served it with this cilantro rice SO good. use basmati rice for the recipe!

- 2 lbs ground beef lowest fat
- 1medium yellow onion chopped (about a cup)
- 3 garlic cloves, minced
- salt to taste (start with ½ tsp)
- pepper to taste (start with ½ tsp)
- 6-8 corn tortillas ( i used yellow)
- 8oz can of corn, drained
- 1(19 ounce) can enchilada sauce
- Cheddar Cheese a lot at least 4 cups
- 1 small can sliced olives, drained
- 1 small can black beans, drained
- 1 small can tomato paste
- 1 tablespoon chili powder
- Garlic powder 1tsp
- Onion Powder 1tsp
- Cumin 1/2 tsp
- Mexican Oregon (if you don’t have that reg oregano is fine) - if you used dry oregano leaves 1 tsp. if you use ground oregano 1/2 tsp
- 2 tsp olive oil
