I have no idea what I am going to cook for supper tonight. What are you all going to have? I might steal ideas from you all!

I unthawed some pork chops and cheating by using sme Shake and Bake!!
With salad and another veg TBD!!!

We're having strip loin steaks with potatoes, carrots or orange cauliflower and broccoli. Then for Tuesday night's dinner I'll use the extra steak I will be cooking tonight, slice it into strips, spread tortillas with sun-dried tomato hummus, add some chopped fresh tomato, sauteed portobello mushrooms and the steak pieces (and any left-over broccoli and anything else I find in the fridge that might be good to add as well) top with an Italian five cheese mix of shredded cheeses, place under the broiler until melted.

That sounds so good. I rarely have leftovers though so i would hve to cook extra!!

Does "unthawed" mean you froze them?

That's exactly why I'm cooking an extra steak. I sometimes do this for our Saturday or Sunday lunch and I just use whatever I have on hand. It's good with chicken strips too.

I think we'll be having salmon cakes, summer squash casserole, and corn on the cob. My neighbor (Mousersdad) brought over some canned salmon, breadcrumbs, and a new recipe for salmon cakes. Do you think that was a hint?

Sure - actually, I already did on the thread "what do you put in yours?" here it is:

Courtesy of Paula Dean from the Food Network...

Summer Squash Casserole (I love this one!)

6 lg yellow squash, chopped (7 cups) - boil in salted water 6-7 min, drain, transfer to mixing bowl.

Sautee in butter: 1 C onion, 1 clove fresh garlic clove (I use more garlic of course ) S & P, 1/2 C fresh parsley

Dunk 2 slices white bread in water, squish to drain, and crumble into sautee mixture.

Transfer sautee mixture into bowl with squash. Add 1 egg. Combine.

Spray casserole dish with non-stick spray. Transfer mixture into casserole dish. Top with crushed cracker crumbs.
Bake @ 350 for 20-25 minutes.

As far as a dinner invitation, I'm planning on that. We share food with each other all the time. He just made some EXCELLENT cheese jalapeno bread.

Meatloaf for us tonight! It's a low-carb version...although I didn't think Meatloaf had a huge amount of carbs.
