I planned on giving several people a little gift of some type of home made baked pecans in a little gift tin. Boy did I get a great recipe!!!

1# pecan halves-toast in oven at 350 for 10-12 minutes.
While toasting whisk two egg whites together until frothy.
Slowly add 1/2 tsp salt and 1 cup sugar. I also added a dash of vanilla extract.
Beat until thick.
Add the toasted pecans and mix well
Turn out into a pan lined with parchment paper (easy to clean)in a single layer-you need a fairly large pan
Bake at 250 degrees for 35-40 minutes. I checked every 15 min-they might be slightly brown which is ok
Cool and then break into smaller pieces.

Resist the urge to eat at many as possible!!!

So they're like pecan meringues? Sounds good and easy to make!
