Muffin mania!!!

So will someone please tell me why I made 6 dozen muffins on Sunday???
Oh did I mention I used the "mini-muffin tins!!

I made 3 doz corn muffins and 3 doz chocolate chocolate chip!!
Why because bought another silicone bakin pan-this time mini muffin pan and also baked some in the regular muffin tin.
My findings: the silicone baked "faster"??? I hink I will lower the temp by 25 degrees next time.
However I also bought a silicone loaf pan and a new stainless loaf pan and the bread that was in the silicone pan was not completely baked in the middle.
So I most likely will have to adjust the temp upwards.

Does anyone else use the silicon baking pans and what are your findings??

When we had a Kenny Rogers' restaurant in our local area, I went just for the corn muffins. MMMMMMMMMMmmmmmmmm Good. If any of you have a recipe close to that one, I'm all ears!

you should check robbiesrecipes.com they have some "restaurant" recipes!!
These are not the recipe I originally wanted to make. I had found a recipe that called for buttermilk and montery jack cheese but the recipe vanished!!!! So I had to alter another one I found. DH didn't think it was too bad. He didn't like the chocolate ones (more for me!!)

We seriously WANT to buy those silicone baking thingies, but haven't done it yet. Seems like they would be so much easier to store! But I'm not sure which size we want first... I'm really interested to hear how they have worked or haven't worked for people!

me too.
I bake a lot of muffins and my metal muffin pan is so worn out!
I'm very curious about those silicone ones...

The cooking store where I bought the loaf shaped one-I mentioned how my loaf pans get rusty-she recommended stainless steel which I bought also. The muffin pan is kindof floppy so I use a pizza peel to slide it in and out of the oven!!

To prevent my loaf pans from getting rusty, I always put them in the still warm oven or on a burner for a few seconds after washing to remove any moisture.
