I've had my cat since October, and he's about 8 months old. Up until this point, I've just been feeding him Weruva's Cats in the Kitchen. Recently, I've been seeing the benefits of a rotational diet, I I've been trying to find foods at varying qualities and price points to give him more of a variety. I know that the final decision is based off of if he will eat these foods, but I came up with a list to start with. I just wanted to know if anyone had experience with these foods, and if I should make any changes. I plan on feeding a rotation of Weruva's Cats in the Kitchen, Nature's Variety Instinct, Chicken Soup for the Soul, Whole Earth, and Merrill Purrfect Bistro.

Yes, that's a good rotation
I feed Weruva (all except the BFF line) and NV  Instinct to my cats as a bedtime snack. You can sign up on the NV web site to get coupons in your email. There's usually a coupon sent out every other month or so.

Soulistic is made by the same company that makes Weruva so all the food is bascially the same, just with a different name and maybe a slight ingredient difference. Soulistic is less expensive and found at Petco stores.

All of your listed brands are good quality foods although I've never tried Chicken Soup for the soul. As for my experience with the others...I love feeding Weruva's CITK...unfortunately my really picky cat decided recently that she suddenly doesn't want it anymore
She wouldn't touch Nature's Variety, was Ok with Whole Earth Farms...sometimes...when she felt like it.  She is the pickiest cat ever though.  And she actually really likes the Merrick Purrfect Bistro Trays- which have slightly different and better ingredients than the Puurfect Bistro cans, since most of the cans contain carrageenan and the trays don't.   And if you'd like some other similar price-range good quality suggestions- Soulistic as LTS3 mentioned is great, and Nutro Natural Choice is one I like to use, when my cat will actually eat it, lol.

Of the brands you mentioned, Whole Earth Farms is the only brand that I have experience with.  When I first offered her the Real Duck Recipe, she wasn't crazy about it.  I was about to donate the cans but decided to try it one more time, by means of a small sample; the size of a large spoonful.  Lo and behold, she gobbled it up.  I don't want to press my luck so I give her the duck only about once every two weeks and only a large spoonful at a time.

Overall, our rotation works very well.  I keep about 12 different flavors (no corn, no wheat no soy; from various manufacturers) at hand and she will finish every one.
