My mother has 2 incredibly finicky bengals ...

They were raised on home-cooked FISH (at the breeder's recommendation), raw beef and dry food.

She cooks (poaches) mahi-mahi and albacore tuna steaks for them. Sometime sushi grade ahi.
They used to eat wahoo, but don't touch most other fish. Sometimes they'll eat roasted turkey, not always.

They used to eat canned (human) chicken, but cooked, fresh chicken is pretty much a no-go.

Sometimes they'll eat what she makes, but lately they just walk away in a huff and she's going crazy :( Has been up late nights trying to cook another thing and another thing.

One cat will eat Wellness canned chicken and some of the Tiki canned flavors.
The other won't eat any canned food, but likes the Whole Life Dehydrated Chicken (which gets mighty spendy as it is only supposed to be a treat!)

She's searching high and low for something that will please them. And is worried sick that they are not eating at all.

They do have dry food and the dehydrated out and available to free feed, as well.

Desperate as we're out of ideas.

Do they eat the dry food? If so, how much?

They really shouldn't be eating unbalanced meals on a regular basis. If she wants to learn how to make a balanced homemade cat diet, there are ways to do that, but just feeding cooked meat/fish (or the Whole Life treats) isn't balanced.

If they're eating a decent amount of the dry food, I'd say to just offer one kind of canned food per meal and let them decide what they want. If they aren't eating enough of the dry food, I think it's time for a vet visit. Decreased appetite can be a sign of any number of health problems.

Both cats are nearly 14 years old; she's had them from kittens. I agree, and they both used to eat more dry but with fewer teeth I guess it is difficult. One does not eat dry.

The vet just checked them out this past week and only noted a bladder infection in the female.

The female is more willing to eat a variety, and will eat some canned foods - sometimes. Not the dry.

The male eats the dry and dehydrated and is far more difficult to encourage with fresh foods. Though some days he will gobble it down happily.

I have tried to determine how much of the dry & snacks they are eating through the day. I don't live with them :)

And they are both pooping, so they must be eating something, right?
