I got her on the 15th. She has only been this way for a few days. She will eat if I take her the food and she snuck in to use the bathroom while we were gone. I had my kids for the weekend but she had met them and let them ammo hold her. The fireworks were going all weekend and we live in an apartment. Come that be her stress?

It could very well have stressed her. Can you put her food, water, and litter in the room where she likes to hide? This might make make it easier for her to eat, go potty, and to relax and acclimate.

The kids coming and then going may also have stressed her. Is that the first time she had met them?

Coming from the shelter barely two weeks ago, fireworks, and children may have been a little too much for her too soon. I would expect her to need more time to adjust and bond. Make her as comfortable as possible and give her loads of attention and reassurance - and most of all give her time - and she should be fine in the long run.

You could buy a Feliway diffuser and plug it into the room she primarily stays in. Not cheap, but it emits calming pheromones that really seem to help cats.

Sit with her and make sure she eats. Cats can go downhill fast if they don't eat.

I think @sarthur2  has said it all. I might consider trying Spirit Essences as well as Feliway though. Also, remember that interactive play is a great tool for building confidence, so definitely see if you can engage her that way. Try blocking off hiding places under things too, to encourage her to come out and up.
