I have seen these listed on several food labels. Are these potentially harmful? I know that some nitrates can potentially cause cancer, but is sodium nitrate any different? I have heard that too much phosphorus could be bad, but is tricalcium phosphate okay?

As to tricalcium phosphate, it isn't phosphorus. It's calcium from bone ash, actually, and is often used in calcium supplements. I assume it's the source of calcium in the food.

I would simply note that yes, if it says "phosphate" in the name of the compound, as in "tricalcium PHOSPHATE", it IS phosphorus. It is also calcium. But it is valid to wonder about the amount of phosphorus coming with that calcium. I'm not saying it's dangerous, but the question is valid.
