Rick told me this morning that he had talked to his sister last night after he came home from bowling. She will be picking up their mom and the two of them are coming down for dinner on Saturday. He said not to worry, that he would grab two large pizzas. But I said that, for the price of two large pizzas, I could just cook.
So, since I opened my mouth:
Penne with Roasted Vegetables
A clone of KFC's Coleslaw (I actually like KFC's coleslaw, but I reduce the fat and calories in what I think is a good copy of theirs)
Tomato Bread
Dessert will be Blueberry Crumb Cake and some cookies
This isn't a huge, exotic dinner by any stretch. But I have everything I need (except for the smoked mozz) to make everything, so I might as well do it.
I'm making cookies anyway because we're going down to see our kids and grandkids on Sunday. The grandchildren go to a private school and we received a "We Need Money!" letter from the school. We are to donate money for each lap the kids run. Well, Caleb, who is 7, ran 4.5 miles and Sarah, who will be 5, ran 3.25 miles. Not bad at all! Last year, Caleb did 4 miles, so he increased his distance a bit. We're going to take a check down to them for their laps, but Caleb reminded me that last year, I baked cookies for him for running his laps so well. And, of course, they want cookies....they take after their Grandpa.
So I'm making cookies tonight, along with the tomato bread, which I'm going to turn into a kind of focaccia. Not sure what kind of cookies yet. Caleb loves peanut butter, but Sarah takes after her Grandma and her great-Grandma with chocolate. Anything chocolate.
Anyway, I think that will be an OK family dinner, nothing fancy, but it should be good. The penne is a Giada recipe and it's quite good.....I've made it several times now.
