It's our Meatless Monday, so pasta with fire-roasted tomatoes, garbanzo beans, and lots of fresh veggies. Topped with my tangy tomato salad dressing. With a breadstick for each of us.

Going to have last night's supper (maid rites, chuckwagon beans, and strawberry shortcake) tonight. Had it all ready last night when DH calls from work to tell me "I sent one of the cashiers to Taco Bell to get me a box meal for break, and she came back with a 12 pack box of tacos; I'm bringing home most of them." Ok, no problem--just put everything in the fridge.
Have you ever tried to eat a 3 hour old, cold taco?
I'm not a big fan of Taco Bell's tacos in the first place, but those things were inedible.
I guess it's the thought that counts, huh?

Tequila lime grilled shrimp on a bed of wild rice. With grilled broccoli and cauliflower. And a grilled herb-stuffed tomato for each of us. (The grill will definitely get used tonight.)

Chicken fried rice and steamed broccoli on the menu tonight, with stawberry shortcake for dessert.

Whole wheat spaghetti with sauce and a salad of greens and veggies. DH says he would kill for spaghetti!

Tonight is simple burritos - ground beef, taco seasoning, flour tortilla, and shredded cheese

Y'all need to teach me how to cook!


Actually I can follow a recipe fairly well, it's just the logistics of having the right ingredients for a given recipe, and using them up before they go bad. I'm also terrible at substitutions - have to follow the recipe exactly!

Oh boy! I think my husband lived on cereal and hot pockets before I came around. But yesterday was our 8th wedding anniversary; so he's been eating good for a while now.


As far as your cooking dilemma you can try what I do. I make a menu for the week and then make my grocery list from that. I know it's hard to cook for one person; so maybe consider freezing portions for later? I'd forget what I froze but I have a friend who cooks like a months worth of meals at a time and freezes stuff. She's organized like that...helps her out since she has 2 toddlers to chase and a husband who could be considered one...don't tell them I said that though...


I get a lot of recipes from bettycrocker.com. They have "cooking for 2" recipes as well. And recipes.com used to have a tool right on the page to let you break recipes down for smaller or larger portions and what not. I think it still does but I haven't paid much attention when I've been on there lately. Oh and on bettycrocker.com they have a tool where you can put in up to 3 ingredients you have and what type of dish you need to cook (like main dish, side dish, dessert, etc) and they will give you a list of suggestions. That helps me out when I know I'm in the mood for say steak but I want to do it different.

Ok was that enough of my advice for you?

I ordered pizza tonight. Didn't get to the store to get fresh veggies and my stuffed mushroom isn't thawed out.

Tomorrow I'm having a stuffed portabello mushroom, salad and a baked potato.
