Morning everyone!


I hope all of my Canadian friends had a good long Thanksgiving weekend. It was absolutely beatiful weather here this weekend. Coulnd't have been better.

Back at work this morning. Tonight I am going to be studying and hopefully hitting the gym.

DH has a meeting.

Im having a nice lazy day, my mam and dad have gone away on holiday

its niceish weather here, but have got the heatin on so im nice and toasty and warm

Morning everyone,
I've yet to fall asleep so I've pretty much been awake all night. (still having issues sleeping/breathing so I thought I'd try sleeping on the loveseat....mmmmm not so much!
) I wound up just taking the dogs for a walk a little while ago instead. It sooooo lovely outside! It's was still pitch black outside on our walk, so the stars looked pretty against the sky and the weather felt great for a quick walk!
Right now I'm watching some tv and doing a little online SS shopping. After I finish that up, I'm hoping to get a little sleep later.

Morning all!!

Taking the garage to the end of the driveway this morning and I heard a loud bang!
It was still dark but a saw a vehicle stopped by the bridge. A police vehicle came about 10 minutes later. Still dark-ish outside. Must have blown a tire and I just saw he vehicle drive up the road with the police vehicle a short time later.

My "excitement" for the day!

Finishing up a quick load of laundry, then have to change and pack gym bag and off to gym with morning before work. Bank and a cat food stop after work.

Nice day with temps in the mid 60's (really all week).

Morning!

Poo to being back at work after a lovely 3-day weekend. My co-worker and I were just talking; the first thing he said to me was, "Is it Friday yet?"
Do I ever wish!

Have a planning commission meeting tonight right after work, so it will be a long day today. DH is on dinner duty, so he'll be digging around in the freezer for a container of ham and bean soup and throwing together a salad.

It's raining, too, and dreary.

Slow start today...Well not really I got up early but Bf was supposed to be picked up to go to a job site and noone called him to tell him to go to the shop so he ended up losing half an hour in waiting for someone but I guess he is gonna eat his lunch on the run to make up for it since he has to be home early today because heaven forbid his father do anything for himself.

Im working on a new project today Ive got a quarter of it done but its working in rounds which I hate with a passion but Ive been looking for this pattern forever and finally found it. Maybe someday soon Ill be able to actually work on something for myself lol. Too bad Ive still got Christmas presents to make so my nice wool yarn I got on sale will just have to wait.

There's a Sea Dogs hockey game tonight, so that'll be the highlight of our day. They won the last 2 games and have been playing great, so tonight should be a good game. I'm a little sad however... My favorite player has been replaced.

Morning. Cloudy since around 5PM yesterday, but the sun is finally starting to peek out a bit. It's supposed to be sunny and mid-70s today. Nice enough.

I have to get a lot of homework done today, and also head out to do some errands, pick up sandpaper and cat food and some other stuff.

I was supposed to go to a concert with a friend in Hollywood, but alas, my body is saying 'no, you better not dare.' So I guess I better stay home. Sigh. I am pretty mad about that. Anyway...

So yeah, most of the day will be devoted to homework. Fun times! I might try my hand at some lemon baked goods too, if I can use a hand mixer instead of a spoon. I gave away 10 lemons on Thursday, made lemonade on Sunday, and we still have 6 in the fridge. They just keep coming!


Well have a good day everyone, if anyone wants some lemon cookies, let me know! (seriously! cookies can go through the mail, right? I will mail you lots!)

Here's a good recipe for lemon sponge cake cookies, if you're interested....it's one of my favorite cookies.

LEMON SPONGE CAKE COOKIES

1 c. butter or margarine, softened
1½ c. sugar
8 eggs
2 Tbsp. lemon extract
4 c. flour
¼ c. baking powder

Frosting:
½ c. butter or margarine, softened
3¾ c. confectioners’ sugar
1 tsp. lemon extract
1/8 tsp. salt
3-4 Tbsp. milk
Food coloring, optional
4 c. flaked coconut, optional

In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour and baking powder; gradually add to the creamed mixture. Drop by teaspoonfuls about 3 inches apart onto ungreased baking sheets. Bake at 400 degrees for 6-8 minutes or until the edges are just slightly browned. Remove to wire racks to cool.

In a mixing bowl, cream butter, sugar, extract, and salt. Add enough milk to achieve a spreading consistency. Tint with food coloring if desired. Frost cooled cookies. Sprinkle with coconut, if you like. About 11 dozen cookies.

Note: The amount of baking powder is correct. You don't have to sprinkle the cookies with coconut if you don't like coconut.

The recipe calls for lemon extract. Do not substitue lemon juice for the extract. Lemon zest would be the substitute for the lemon extract. Do not use lemon juice, it will make the dish lemony but very tart. (And you have a lot of lemon zest on hand!)

Yes Pam, I won't use lemon juice, even though i really really want to!!


If I can use zest though, that will use up some fresh lemon! I am going to print that out and when I make them I'll let you know how they are. Sounds yummy!!! Thanks!

By the way, any chance that a halved version would work? That's a lotta cookies!

Good evening

Had an uneventful, boring workday. Killed an hour sitting in my car at lunch typing stuff for school, at least I was productive there


Kitties received a gift in the mail today, and they've been trying to take the package with them
I said they cant have it just yet, they just got a new toy last week that they tore apart in less than an hour. So in a few days when I just cant resist, they will get their new present.

Made a pork loin with gravy for dinner, and some green beans to go with it. Was pretty darn good for a last minute dinner decision.

Happy I have a short week this week (have Friday off
) Getting pretty sleepy already, might lay down shortly and conk out for the night
