After taking the chicken out and picking off the meat I put the bones back in and simmer some more till it is reduced a bit, strain the broth, then add the chicken meat, spinach, canned chopped tomatoes, fresh mushrooms (I sautee them first) more onions (also sauteed) and about a truck load of garlic and oregano. Right before serving I stir in a good dollop of cottage cheese, large curd (If you add that while it is cooking it melts and sticks to the pan) Some good crunchy buttered bread on the side to dunk, YUM!
Its similar but not quite to Italian wedding soup, (before adding the cheese) just no meatballs.
Wow, that sounds amazing! I've never heard of adding cottage cheese to soup. I just made chicken soup (I'm sick as a dog
) but just a regular clear broth soup with peas, corn, potatoes, carrots and of course the chicken. I wonder if cottage cheese would be good in that...I might have to try it...

It's going to be left-over BBQ for me, I still have some ribs, and am going to make some salad from the left-over potato's and corn.

The cottage cheese goes well the Italian seasoning I put in, and spinach and cheese is always good! Don't think it would work well with regular chicken broth though, but hey, try a little, who knows! If you are sick I would stick with just the plain, the cheese could get you a bit phlemmy.
Feel better soon!

I did try it! It was pretty good, kind of like the equivilent of adding chunky sour cream, just gave it a little bit of dairy flavor.

Mmmm that soup does sound good...

Last night we went out for a long bike ride and rewarded ourselves with delicious sushi from our fave restaurant.
Tonight will be something of a let down after that, probably leftover pasta.

We were at a family celebration last night in Victoria, at the Fireside Grill. My Filet Mignon was gorgeous, Rob's Prawn & Scallop Saute was lovely, and a good time was had by all.

Tonight we have some salmon leftover from Friday night that's going to stuff an avocado on a bed of greens. One of our favourite light summer meals.

At the pool all day and got a sunburn, didn't feel like cooking so opened a can of tuna with whole wheat crackers and there you have it, dinner.
It was yummy.

Ate way to much BBQ over the weekend so today is going to be a light type of day. I have a couple of nice tilapia fillets, which I will broil, steamed asparagus, and a green salad. I make a nice lemon dill sauce that goes great with the asparagus as well as the fish.

Despite the fact that we're had fish or seafood every day since Friday, I think it has to be the salmon sausages we postponed last Thursday -- they won't keep forever! I may put them on the grill. There's lots of salad stuff around, and a few nugget potatoes left from Friday to fry up.

Me: a lean cuisine meal
Kids: pizza pockets.

I'm feeling lazy and sore today.

Tonight it will only be me and my youngest daughter, so hmmmmmm.

I think I may go the easy route again, and we'll have grilled hamburgers.
