Got this recipe from a co-worker and tried it on Friday. It's really yummy. Great for lent, but also if you just love mac and cheese!

Macaroni and Cheese Pie

9” pie crust
1 Cup elbow macaroni (measure uncooked)
8 oz. grated cheddar cheese
(hold ¼ cup in reserve)

¼ cup butter
¼ cup flour
2 Cups milk
salt and pepper to taste

Cook macaroni, drain, set aside

Make white sauce by melting butter
and stirring in flour with whisk until blended.
Slowly add milk and stir until thickened.
Salt and pepper to taste.

In pie pan, layer 1/ 2 the macaroni,
½ the cheese and repeat layers
Pour white sauce over the top and
Sprinkle with reserved cheese

Bake at 425 degrees for 30 minutes
Or until top is browned and bubbly.

Never thought of putting Mac & Cheese in a pie, either...

The M&C is pretty much exactly my recipe, so I know it will be wonderful -- the older the better on the cheese, and if you want to boost the cheese flavour, sprinkle it with 1/2 teaspoon of dry mustard and a dash of cayenne, and shake it to distribute reasonably evenly.

Fighting for ferals in NW NJ!
Want to make it have even more calories?

My mom always topped mac & cheese with the layer of extra cheese, then bread crumbs with melted butter sprinkled on them. Makes a really crunchy topping.

You can use a mix of different cheeses too!!
This sounds like a good recipe and I'm the only one who eats it and its a makes a smaller amount so less leftovers!!

Also to make it healthy use whole wheat macaroni-you won't notice a difference!!
