Ok so I have been in an inventive mood since starting to eat better, because the "good" foods, if you don't know what you're doing, can become very boring and not satisfying. (To me, anyway) SO...tonight I did this: A little olive oil on some foil and baked a chicken breast sprinkled with Mrs. Dash and Penzy's Herbs de Provence and drizzled with Basalmic vinegar. For a veggie, I took raw baby spinach, sliced mushrooms and a handful of raw almonds and tossed it with a drizzle of basil flavored olive oil and I'm going to bake it. It looks good, but the test is coming if it will BE good. Does this sound good to you?? I don't kow why I chose to do what I did, but we'll see if it turns out!?
