He believes that the microchip isn't natural, and therefore shouldn't be put in the cats. I am hoping the conspiracy theory was just a joke, but knowing how him and his father are, I doubt it.

I too have a Drinkwell fountain. We absolutely love it. Like noted before, make sure it's full before you leave. Also, when we bought it, the clerk said that we should only use filtered water. Something about being less demanding on the filter. IDK, but we love it, and the cats love it too.
You're right to be worrying about declawing. In my opinion, declawing is a cruel procedure that is done only to benefit the owners. I have promised myself that my kittens will not be declawed for any reason.
