Leftover blueberry-raspberry pancakes (buttermilk pancake mix with raspberry jam and frozen blueberries mixed in), topped with butter, raspberry jam, and maple syrup.
Started experimenting on a whim, but it turned out awesome.

I'm having chicken, ham, and venison burritos with melted colby and swiss cheese. All of this was leftovers from one meal or another, so I figured I'd make something quick, easy, and filling tonight.

I'm thinking split pea soup tonight (from the freezer). It's a good soup night.

I have so options here, but my husband is sick so it's up to him. In the refrigerator I have spaghetti sauce with sausages and meatballs, homemade chicken soup and store-bought chicken soup. He may change his mind, but as of right now he wants scrambled eggs with ham and potatoes for dinner. :lol3:

I cut an acorn squash in half and put it in the crock pot with some vegetable broth in the bottom. In the hollows of the squash I added some Smart Balance margarine. a little brown sugar in the raw, a dash of chili powder, kosher salt and Vietnamese cinnamon. That will slow cook all day until I get home. No idea what I'll have with it. Maybe a sandwich on 5 grain italian bread with tomatoes, lettuce, onion, hot peppers and vegan mayo. Yummy. #Veganuary

I picked up a lemon pepper rotisserie chicken from Wal Mart yesterday after church. We will have that with some collards from the freezer and some baked sweet potatoes.

I saw a bag of Trader Joes orange chicken in the freezer. I am having that tonight with some rice...It will be enough to last for several days, and then I will be tired of it!!

I could take just a bit out, but I wanted to get more space in the freezer.....

I am not sure how much I will make, I have to open it up to see how much is in there.

Sweet and sour pork. It's been forever since we had that for dinner. I'm going to use leftover pork from the freezer (it's from Christmas), so I should have it ready to go in about an hour or so.  I have some Trader Joe's long-grain rice to serve with it.  


Rick just loves the stuff, too.

My friend and I are going to have beans and cornbread later this evening, so I've got white beans simmering slowly in  the crock pot, just added some chicken chunks, pork pieces and a touch of taco seasoning for a bit of zip.Will add chopped onion later. It's only 27 degrees and the temp is steadily falling, so I think it's a good idea.
