I just adopted a female cat (a year and 8 months old) from a shelter about a week ago. I have her medical records which say that she was spayed about 2 months ago. I didn’t get a really close look at her stomach before so I don’t know when this started, but her nipples are pink and bigger than other female cats’ that I’ve seen. I looked it up and it’s a common sign of pregnancy, but she was spayed. Is there something else this could be? Should I take her to the vet? Is there any chance she’s pregnant?

That was my immediate thought, as well. Should she begin showing other signs of pregnancy, talk with your vet. There are a few hormonal issues that could cause this, as well as false pregnancy, which is psychological. However, I'm betting on a previous litter. The nipples never go back entirely to the pre-litter state.
