Fresh meat, Dehydrated meat. What's different?

Hope to get some knowledge from you.
In Orijen Original Cat, for example, the first ingredient is chicken and the 9th ingredient is dehydrated chicken.
This means the chicken, the first ingredient, is not a dehydrated meat and Orijen also says the first five ingredients are always fresh or raw protein including poultry and fish.
What I know about fresh or raw meats is that they have more moisture than dehydrated meat and there's about 70% of moisture in fresh meat.
But Origen Original Cat(or any other cat food that used fresh meats) contains just the same level of moisture(10%) with other typical dry cat food.
Instinct Ultimate Protein also use chicken or duct that are not meals or dehydrated, but also the same level of moisture.
I think these mean even if some products use fresh or raw meats for the first ingredient, they are also dehydrated at the end in a certain procedure.
If it's right, then Is there any meaning of using fresh or raw meat instead of dehydrated meat in dry cat food?
Of course if it's freeze-dried then it would have some meanings but if it's just typical rendered or steamed dry cat food, what's the point of using fresh meats?

Would you consider contacting the manufacturer? Your question is pretty specific, and commercially made foods are an arena that's quite different than feeding raw or home-cooked.
