I'm at a loss for brunch on Christmas morning
Here's my idea:
Quiche (with bacon, sour cream, spinach, 'shrooms, ham, and Monterey Jack, Cheddar and Parmesan cheeses; the recipe makes two quiches)
Browned sausages
Roasted breakfast potatoes
Sauteed apples
New York-style Crumb Cake
Plate of Christmas cookies
Mimosas
Hot chocolate and coffee (I have my marshmallows to plop into the chocolate, too)
OR
Caramelized Upside-Down Bread Pudding (This is really rich)
Browned sausages
Sauteed apples
New York-style Crumb Cake
Plate of Christmas cookies
Mimosas
Hot chocolate and coffee
There will be seven of us for brunch and we are all rather hearty eaters, so brunch cannot be light. And it's the only meal we'll probably have all day, at least for Rick and me. I don't want to skimp on anything and I don't want people to feel that they're still hungry afterward!
Am I missing anything? What could I add? Anything you'd want for brunch?
It wouldn't take me long to put together a couple loaves of freshly-baked bread, but it's a lot of carbs as it is for both meals (not that anybody is worried about carbs or calories or anything really). With some honey-butter.
I just don't know.....any ideas?
